San Leon Smash - A Fruity Rum Cocktail

Ingredients
- Railean Reserve XO
- Amaro Avema
- Fresh Lemon Juice
- Fee Brothers Orange Bitters
- Medium sized Orange, Cubed
- Fresh Mint
- Two Cloves
- Medium sized mason jar
Directions
- From Lucy Rose, bartender at Sagra bar & restaurant in Austin, Texas. At Sagra they enjoy pairing Texas spirits with herbs that they grow in their greenhouse.
2 oz. Railean Reserve XO
1/2 Amaro Averna (a Sicilian liqueur available in fine liquor stores)
1/2 fresh lemon juice
2 dashes of Fee Brothers Orange bitters
1/4 of one medium sized orange, cubed
freshly muddled mint leaves
two cloves
one orange peel
medium sized mason jar
Muddle cubed orange in a mixing glass. Add mint and bruise lightly with muddler. Add spirits, juice and bitters. Add ice, shake gently 4 or 5 times in a cocktail shaker, pour into mason jar without straining. Push two cloves into a thick orange peel, light cloves on fire, then squeeze orange peel through the flame, igniting the orange oils over the drink, drop into drink and stir 2 or 3 times, leaving peel near the top of drink. Garnish with a big sprig of fresh mint and serve without a straw. Dangerously good.
